Prepare the Ribs
Pat the ribs dry after giving them a rinse. If your ribs have a membrane on the back, remove it. Use a butter knife to lift the membrane from one corner of the rack and then grip it with a paper towel to peel it off.

Add mustard as a brine
Mustard is use as a brine and marinade. Mustard adds a distinctive, tangy, and slightly spicy flavor to the brine or marinade. Mustard contains natural enzymes that can help break down proteins in meat. This can lead to more tender and juicy results when the meat is cooked. It can moisture the meat during the cooking process. As the meat cooks, the mustard forms a flavorful barrier that helps trap moisture inside, preventing the meat from drying out.

Add dry rub
You can use a store-bought rub or make your own by mixing garlic powder ,onion powder, smoke Paprika, cumin, coriander ,thyme, oregano.cayenne ,salt, black Pepper and chicken bouillon . Brown sugar can be also added in the mix . measurements for the rub is already listed. Make Sure to coat all side of ribs with dry rub, pressing to make sure the dry rub is well coated. Shake off any excess.

I cut the ribs apart and marinate overnight.Marinating allows the flavors of the marinade ingredients to penetrate and infuse the surface and interior of the food. The longer the marination time, the more time these flavors have to permeate the food, resulting in a deeper and more complex taste.

Wrap in Foil
Lay out a large sheet of aluminum foil. Place the ribs on the foil, meat side up. You may need to cut the ribs into smaller sections to fit them on the foil. If you have multiple racks of ribs, you can wrap them individually or together, but make sure they are in a single layer.

Seal the Foil and bake
Fold the foil over the ribs and seal it tightly, creating a packet. Make sure there are no openings for steam to escape. Place the foil-wrapped ribs in the preheated oven for 2.5 hours

I like to give the barbecue sauce a lil kick. In a bowl add barbecue sauce , honey , ketchup and green seasonings. If you don't have green seasonings you can add some herbs to the mix.

Once the ribs are tender, remove them from the oven and carefully open the foil packet. Drain any excess liquid. Brush a generous amount of barbecue sauce onto both sides of the ribs.
